Fruit Valley Recipes - Ratatouille
 
     
 
 
     
 

This is a wonderfully flavorful vegetable dish that can be served as either a side dish or as a main entree.

A wonderful way to serve ratatouille is with crepes. Very delicious. You can also add a mixed green salad on the side, and some French bread with butter for a scrumptious meal. It freezes really well for future use.

4 tablespoons olive oil
1 large sweet Spanish onion, rough chopped
1 Fruit Valley large green pepper, cut in big cubes
1 Fruit Valley sweet frying pepper, cut in big cubes
1 Fruit Valley eggplant , peeled and cut in big cubes
4 Fruit Valley large tomatoes, cored and cut in pieces
6 Fruit Valley fresh basil leaves
1 Fruit Valley medium green zucchini cut in big cubes
1 Fruit Valley medium yellow squash cut in big cubes
4 ears Fruit Valley white sweet corn, cut from the cob
Salt & pepper.

Heat oil in big pot. Add onion and cook 5 minutes until soft. Add rest of ingredients except for corn. Simmer on med- low heat for 1 hour then add corn and continue to cook for another ½ hr.
